Æbleskiver Recipe

Ingredients:
8 cups of flour
1/2 cup of sugar
1/8 cup baking powder
1/8 cup baking soda
1 tablespoon salt
1/2-gallon buttermilk
1 dozen eggs (separated)
Procedure:
Premix dry ingredients - Flour, sugar, baking powder, baking soda and salt
Separate egg yokes from the whites.
Whip the whites in small mixer.
Combine egg yolks, buttermilk and dry ingredients in large mixer
Fold the whipped whites into the dough.
Pour the dough volume will fill a large plastic bin (12”x12”x18”)
Pour batter into squirt bottles
Fill indentation of pans with a little vegetable oil, then squirt batter 2/3 full into hot oil & turn
Serve with strawberry jam or powdered sugar. Serve with maple syrup for an American twist on the classic recipe.

Gluten Free Æbleskiver
Ingredients:
3 large eggs
2 cups buttermilk
2 cups gluten free flour (276g of Namaste 'Perfect flour mix')
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
2 Tablespoons granulated sugar
1 Tablespoon ground cardamom
Procedure:
Sift flour, baking soda and baking powder together
Separate & beat egg yolks into mixing bowl
Stir in salt and buttermilk
Add sifted flour, baking soda and baking powder
Fold in stiffly beaten egg whites
Place small amount of melted vegetable shortening and butter
into each indentation of pan, then fill each section about 2/3
with batter. When batter starts to solidify, nudge with knitting
needle or skewer stick to flip onto opposite side. Cook until
golden brown on both sides, ensuring it's cooked through.
Serve with powdered sugar and/or your favorite jam!

Egg Bake
Serves up to 12
Ingredients:
¼ c. Butter or margarine
2 tsp. salt
18 eggs
¼ c. green onion
1 c. sour cream
1 c. milk
Optional garnishes - green onions, crumbled bacon, ham, cooked sausage, mushrooms and tomatoes
Procedure:
Set oven to 350°
Line 9 x 13” pan with parchment paper
Put butter in pan and place in oven to melt
Remove when melted and tilt pan to coat evenly
In a large mixing bowl, beat eggs, sour cream, milk and salt until well blended
Stir in green onion and pour into pan
Bake until set but still moist (about 35 minutes)
Optional garnishes may be added during the last 15 minutes and will set nicely on top but be careful not to let too much heat out of oven when doing this!
This is a foolproof winner for any brunch and may be served hot or (if there are any leftovers) sliced and cold on a piece of toast.

Easy Almond Torte
Ingredients
2 eggs
¾ cup butter or margarine
1 ½ cups sugar
3 tsp or 1 T almond extract
½ tsp vanilla
1 ½ cups flour
1 8 oz pkg slivered almonds
Directions
Preheat oven to 350 degrees.
Line an 8 or 9 inch round pie pan with foil
Melt the butter or margarine
Cream butter with with most of the sugar, save about ¼ cup
Beat in the eggs, almond extract, vanilla and flour
Pour mixture into the pan
Smooth out batter and sprinkle with the reserved ¼ cup sugar and slivered almonds
Bake 35 to 40 minutes
Cool, peel foil off and slice.
Serve with fresh berries, whipped cream or ice-cream.
